— Beautiful streamlined shape commensurate with unparalleled sharpness —
The Asymmetry was developed at the direct request of the executive chef of a hotel to make a knife to be used by the Japanese team (which won a Bronze medal) at the world chef championship "Bocuse d’Or" held in France in January 2013.
The steak knives are manually made one after another in 38 steps by artisans who have inherited the traditional technique of Echizen Uchihamono, which has a history of more than 700 years. The handle has a hollow-body structure, achieving weight reduction alleviating the user’s tiredness during use. After the handle and the blade are welded together, an artisan buffs the entire knife carefully to make the surfaces smooth. The asymmetric handle, pursuing functionality, is remarkably beautiful and attracts its users. Forging and buffing 70-layer Damascus steel combining steel materials with methods original to Ryusen have achieved supreme sharpness and generated unprecedentedly novel and beautiful ripple patterns on the cutting edge. The stunning sharpness and beauty commensurate with its performance epitomize all chef requirements for steak knives and Japanese manufacturing expertise.
