Our concept of the restaurant is “to understand, taste, and consume the locally grown ingredients. We pursue our local “Fukui” ingredients thoroughly. Two chefs welcome customers from local areas and outside areas. They bring out their craftsmanship by setting no boundaries in cooking methods. Dishes cooked over wood fire, especially fish and meat, have a unique flavor like no other.

Customers can select their own steak knives when dining at our restaurant. All the knives are made in Echizen, the manufacturing city of cutleries. Among them are the steak knives from Ryusen that have the best line up of steak knives. The SK04 is the most popular with our guests for its light weight and the comfortable texture of the wooden handle. The SK08 has a sophisticated design combined with the sharpness that can cut through the food fibers astonishing the users.

Both chefs use Oukoku Ryu Series knives regularly. The TM version, with more processes in sharpening, enables us to use the knife for a long time without stress because of the harmonious weight balance; on top of its beautiful appearance.
