In 2022, Masahiro Yoshikawa opened a restaurant "L'aisance" in his hometown Fukui, where he was born and raised, together with his former classmate from culinary school, Kazutaka Akae.
Both trained in French cuisine, while incorporating the essence of their respective genres into their dishes, they have developed their own style based on the concept of "local production for 'informed' consumption," utilizing local ingredients, taking advantage of a knowledge of Fukui's roots.

Aiming to become the next generation of local chefs with a multifaceted perspective, they supervise restaurants and engage in dietary education activities, valuing local food connections.

Rooted firmly in the land, the sensibility of these two chefs brings the terroir of Fukui to life.

The reason we continue to use Ryusen knives is their well-balanced center of gravity, which makes them feel precise and natural in hand.

Some knives are short, some are long, some have excellent sharpness; but unless they are easy to operate, they will not be comfortable in the hand. A knife thoughtfully designed for many different uses reflects the dedication and intent of its craftsman.

These are the knives we were destined for. We believe that encountering such extraordinary tools is one of the true joys of a craftsman's journey.
