Currently, Mr. Bart Cywiński serves as Executive Chef at Pullman Bangkok King Power, where he oversees the entire culinary operation across multiple outlets. At just 16, he stepped into his first professional kitchen — a bustling, high-pressure environment that tested his resilience and sharpened his skills. One of the defining highlights of his career was his time at JAAN by Kirk Westaway in Singapore, where he served as Head Chef. Leading a talented team, they achieved the remarkable milestone of earning one Michelin star, followed by a second, a recognition that reflected not only technical excellence but also the collective passion and dedication of the entire brigade.
Spanning over 25 years, his career has been a continuous process of honing his craft, treasuring produce, and honoring the artisans who work tirelessly to deliver their best. Beyond the kitchen, one of his enduring passions has been knives—particularly handcrafted artisan blades that carry history and artistry within them. He vividly recalls when his idol, the late Jonnie Boer of De Librije in Zwolle, showcased the exquisite blades of Ryusen. As a young chef in London, he could only dream of owning such elegant tools. Fifteen years later, in Hong Kong where he became the Executive Sous Chef at Grand Hyatt Hotel, he stumbled upon the SORYURIN series, and those knives became the most treasured pieces of his collection. To this day, both chefs and guests pause to admire their design, a reminder that craftsmanship, whether in food or tools, is something to be celebrated.
